This is a really simple healthy recipe that can be made quickly and easily. Ras el Hanut is a classic Moroccan spice blend can be found at most of the large supermarkets with the other spices. I like this curry very spicy so simply add more Ras el Hanut to increase the spiciness
Chicken Tagine with Apricots and Ras el Hanut
Ingredients
- 1 tablespoon Ras el Hanut spice blend
- 1 Large Onion (Halved and sliced)
- 4 Chicken breasts (Diced)
- 100g Dried apricots (Halved)
- 150ml Chicken stock
Directions
Step 1 | |
Fry the chicken and union in a little oil until the chicken is browned and the onion is softend and browned | |
Step 2 | |
Add the Ras el Hanut, coat the chicken and onion, the fry for a further few minutes | |
Step 3 | |
Add the chicken stock and apricots then simmer in the pan until the chicken is thoroughly cooked | |
Step 4 | |
Serve with cous cous |
