In preparation for Waitangi Day – the national day of New Zealand – here’s a recipe for what some describe as New Zealand’s Greatest Burger. The recipe has been sent to use by our friends Turners, the largest and oldest used car dealer in New Zealand. Waitangi Day commemorates the signing of the Treaty of Waitangi on 6 February 1840 and is regarded by many to be New Zealand’s founding document.  The day is observed annually and is designated a public holiday so get the barbecue fired up and get cooking!

To go on the burgers, you would suggest salad leaves, gherkins, pickled red onions and mayonnaise

Beef and Beetroot burger

Ingredients

  • 1 Onion (Finely chopped)
  • 300g Tinned beetroot (Drained weight)
  • 500g Lean minced beef
  • 2 medium slices Toast (Crumbed)
  • 1/4 cup Parsley (Chopped)
  • 2 tablespoons Horseradish
  • 1 Egg
  • 8 burger buns

Directions

Step 1
Heat a dash of oil in a pan and soften the onions on a low heat before setting aside
Step 2
Place the finely chopped beetroot in a mixing bowl before adding the beef mince, cooked onion, breadcrumbs, parsley, horseradish and egg. Season with salt and freshly ground black pepper. Form into 8 burger patties. Refrigerate for 30 minutes.
Step 3
Heat a little oil in a frying pan and cook the burger patties over a medium low heat for approx. 4-5 minutes on each side until cooked.
Step 4
Serve in toasted buns with toppings of your choice
