[Unlike the Pizza Express pizza] in classic Italian cooking we would be using skinned, seeded, and chopped tomatoes, but, if you’ve ever tried this, it’s much easier to use Passata

Pizza Padana (Pizza Express)
Ingredients
- l Pizza Base (See above for the recipe)
- 4 to 6 tablespoons Passata
- 2 teaspoons Dried Oregano
- Round of Goats Cheese (Sliced)
- Caremlised onions (See above for the recipe)
- Wilted fresh spinach leaves
- Olive oil
- Sliced red onion (optional)
Directions
Step 1 | |
Pre-heat the oven to 240 centigrade (although traditional Italian pizza is cooked in a wood fired oven at around 400 degrees centigrade) | |
Step 2 | |
Spread the passatta over the pizza base then sprinkle with the oregano leaving an inch or so around the edges | |
Step 3 | |
Evenly distribute the sliced goat's cheese, mozzarella, spinach, and caramalised onions over the pizza | |
Step 4 | |
If you're adding chopped red onion, distribute that over the pizza now before drizzling some olive oil over the top | |
Step 5 | |
Cook for 10 to 15 minutes |
