This is a very simple and healthy soup that takes a very short time to make
Really simple brocolli soup
Ingredients
- Goat's cheese log (Well matured, rind on, and Sliced)
- Walnuts
- Broccoli (Pick dark, rich broccoli that is not flowering and wash it thoroughly)
Directions
Step 1 | |
Boil a large pan of water and season it | |

Cut the florets off the broccoli and discard the thick main stem | |
Step 3 | |
Put the broccoli in the boiling water, cover and cook until a sharp knife will easily stick into the thickest part of the broccoli stems | |

Slice the goats cheese into slices between 1/2 and 1 cm thickness | |

Without discarding the water, use a colander to separate the broccoli and water | |
Step 6 | |
Put the broccoli in a blender and fill to round about half the hight of the broccoli with the water used to boil it | |
Step 7 | |
Blend until you have a smooth soup. Add more water for a less thick consistency. Taste and season more if required with salt and pepper | |
Step 8 | |
To serve, pour the soup into a wide, shallow bowl; add a few walnuts to the centre, then rest the goats cheese on the walnuts. |
