Step 1

Sift the flour and salt into a large bowl and make a well in the centre |

Put the yeast into the lukewarm water and mix very well until smooth |

Poor the water into the well in the flour then use a wooden spoon to mix the two into a soft dough. If the mixture is too sticky, add more flour |

Turn the mixture out onto a floured work surface and knead for 10 minutes until smooth and elastic |
Step 5

Oil a bowl with the olive oil then shape the dough into a ball and put into the dish. Cover with cling film or a damp tea towel. Place into a warm area and leave to rise for 1 hour or until almost doubled in size. If you're making the dough up to 24 hours in advance, place the covered bowl instead in the fridge |
Step 6

To make the pizza base; turn the dough out onto a floured surface, flatten the dough with the palm of your hand, then roll out to approximately half a centimetre in thickness. Oil a baking sheet and put the flattened dough onto it pushing out to around 40 cm diameter circle making sure the edges are thicker than the centre |
