Sausage flan with Gruyere (Flan de saucisse au gruyère)
Ingredients
- 5 eggs
- 4 Strasbourg Sausages (aka knack or alternatively, a smoked beef and pork sausage)
- 1 onion
- 200ml milk
- 3 Small soup spoons of creme fraiche
- herbs de Provence (to taste)
- salt and pepper (to season)
- butter for the flan dish

Heat the oven to 180 degrees centigrade or gas mark 6 | |

Butter the flan dish | |
Step 3 | |
Cut the Gruyere into small cubes | |
Step 4 | |
Cut the sausage into slices and place on top of the Gruyere | |
Step 5 | |
Slice the onion and then mix it with the cheese and sausage | |
Step 6 | |
Beat together the eggs, the creme fraiche and the milk before adding the salt, pepper, and herbs | |
Step 7 | |
Add the egg mixture to the flan dish before putting into the oven for 25 minutes |
