Sausage flan with Gruyere (Flan de saucisse au gruyère)


  • 5 eggs
  • 4 Strasbourg Sausages (aka knack or alternatively, a smoked beef and pork sausage)
  • 1 onion
  • 200ml milk
  • 3 Small soup spoons of creme fraiche
  • herbs de Provence (to taste)
  • salt and pepper (to season)
  • butter for the flan dish


Step 1
Heat the oven to 180 degrees centigrade or gas mark 6
Step 2
Butter the flan dish
Step 3
Cut the Gruyere into small cubes
Step 4
Cut the sausage into slices and place on top of the Gruyere
Step 5
Slice the onion and then mix it with the cheese and sausage
Step 6
Beat together the eggs, the creme fraiche and the milk before adding the salt, pepper, and herbs
Step 7
Add the egg mixture to the flan dish before putting into the oven for 25 minutes
