A nice simple sausage flan recipe using saucisses de strasbourg (Knack) and French gruyere cheese. Preparation time about 15 minutes and cooking time about 25 minutes.

Sausage flan with Gruyere (Flan de saucisse au gruyère)


  • 5 eggs
  • 4 Strasbourg Sausages (aka knack or alternatively, a smoked beef and pork sausage)
  • 1 onion
  • 200ml milk
  • 3 Small soup spoons of creme fraiche
  • herbs de Provence (to taste)
  • salt and pepper (to season)
  • butter for the flan dish


Step 1
Heat the oven to 180 degrees centigrade or gas mark 6

Butter the flan dish
Step 3
Cut the Gruyere into small cubes
Step 4
Cut the sausage into slices and place on top of the Gruyere
Step 5
Slice the onion and then mix it with the cheese and sausage
Step 6
Beat together the eggs, the creme fraiche and the milk before adding the salt, pepper, and herbs
Step 7
Add the egg mixture to the flan dish before putting into the oven for 25 minutes
